Luscious Latkes
Latkes, traditional Jewish potato pancakes, are a beloved Hanukkah treat but delicious year-round. Here’s a simple recipe for crispy, golden latkes:
Ingredients:
- 4 large potatoes, peeled and grated
- 1 medium onion, grated
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil for frying
Instructions:
- Squeeze excess moisture from grated potatoes using a clean kitchen towel.
- Mix potatoes, onion, eggs, flour, salt, and pepper in a large bowl.
- Heat 1/4 inch of oil in a large skillet over medium-high heat.
- Drop spoonfuls of the mixture into the hot oil, flattening slightly.
- Fry until golden brown and crispy on both sides (about 3-4 minutes per side).
- Drain on paper towels.
Serve hot with applesauce or sour cream. For variations, try adding grated carrots, zucchini, or sweet potatoes to the mix. Enjoy these luscious latkes as a side dish or a main course!
